Our Production Process: From Orchard to Export

Our production starts at orchards in Malatya and finishes at a processing facility built to European and international food safety standards. White marble floors, anti-bacterial tile walls, an on-site microbiological lab, every batch is tested before it’s cleared for packing. We handle every stage in-house.
 
Handpicked at the Right Time
Harvest runs through August. Apricots get handpicked so they don’t end up with bruising, they are chosen for ripeness, color, and texture and then it’s basically that, no rush. 
 
Sun Drying and Seed Removal  
After the first drying phase apricots are pitted by hand, and then they go back to the drying beds for another three days. This long standing sequence is part of why Malatya apricots have that distinctive bite, and a more concentrated taste too.
 
Washing, Cleaning, and Sizing  
In the facility apricots are put through two rounds of high pressure washing with fresh water and soft brushes, just to keep them clean and consistent. Workers at inspection tables pull out any foreign material. A mechanical shaker then grades the fruit from size No.1 through No.8 before packing.
 
Metal Detection Before Final Packing

What is the difference between sulfured and sun-dried apricots?

Sulfured apricots are treated with sulfur dioxide during processing. That treatment keeps the color bright orange and adds to shelf life. Sun-dried apricots go through none of that. They come out darker because the fruit oxidizes naturally on the drying bed, and the taste is more concentrated because the sugars are not diluted by any added moisture or treatment.
